- 2 pieces Cloves
- 2 pieces Green cardamoms
- 1 piece Bay leaf
- 1 piece Green chili (slit lengthwise)
- 2.5 cups Water
- Salt
- Fresh coriander leaves – for garnish
Instructions
- Prepare the Masala:In a pan, dry roast the peanuts, sesame seeds, and grated coconut until golden and aromatic. Allow this to cool, then grind it into a coarse paste using a little water. Set aside.
- Sauté the Aromatics:In a pressure cooker or heavy-bottomed pan, heat oil and ghee. Add whole spices: cinnamon, cloves, cardamoms, and bay leaf. Sauté until fragrant.
- Cook the Onion:Add the sliced onions and cook until golden brown. Add the ginger-garlic paste and green chili, and cook for another minute.
- Add Masala Paste:Add the prepared peanut-sesame-coconut paste to the cooker. Stir well and cook for a couple of minutes until the oil separates from the masala.
- Combine Rice and Masala:Add soaked basmati rice to the pan, and gently stir to coat the rice with the masala.
