  • 2 Cans (400g each) Chickpeas, drained and rinsed
  • 1 Piece Cucumber, diced
  • 1 Piece Red bell pepper, diced
  • 1/4 cup Fresh parsley, chopped
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Tahini
  • 1/4 cup Water
  • 2 tablespoons Lemon juice
  • 2 Pieces Cloves garlic, minced
  • 1 tablespoons Olive oil
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the chickpeas, diced cucumber, diced red bell pepper, chopped parsley, and finely chopped red onion.
  • In a separate small bowl, whisk together the tahini, water, lemon juice, minced garlic, olive oil, salt, and pepper until smooth and creamy.
  • Pour the lemon tahini dressing over the chickpea mixture and toss until everything is well coated.
